Spinach and feta muffins recipe


Hey guys, today's blog post is a recipe for delicious spinach and feta muffins! I posted this recipe on my old blog but i decided to repost it on here. These are perfect for any occasion such as an afternoon snack or even a snack for school. This recipe was from a Woolworths recipe catalogue from a few months ago. These are not only delicious but are made of very healthy ingredients, Each muffin has 635kj or 150 calories. 

- 2 cups wholemeal plain flour
- 2 tablespoons of baking powder
- 1 teaspoon of sea salt
- 2 eggs
- 2 tablespoons of olive oil
- 1 tablespoon wholegrain mustard
- 2/3 cup buttermilk
- 1/2 cup crumbled feta
- 1/2 cup grated parmesan
- 60g baby spinach, roughly chopped

1. Firstly you will need to preheat your oven to 180˙C and grease a muffin tray.

2. Combine the flour, baking powder and salt in a bowl, set aside.

3. Lightly whisk eggs, oil and mustard in a bowl. Then stir in buttermilk. Fold into flour mixture along with the feta, parmesan and spinach.

4. Divide mixture evenly among the muffin tray. 

5. Put in oven and bake for 20 minutes or until a skewer/ knife is inserted into the center and comes out clean. Remove from oven and enjoy. 

You can eat these fresh out of the oven with some butter or you can refrigerate for a few days or for longer storage freeze them by glad wrapping or putting them in a container which will last for a few weeks.
